Today I am making fresh Vietnamese spring rolls and dipping sauce. Spring is here and I want something light and fresh for lunch. Be sure to check out my chicken spring rolls and peanut sauce recipe video. This is gonna be good.
Ingredients
1 lb (454 g) medium to large shrimp
12 spring rolls skins
fresh lettuce leaves
mint leaves
Thai basil leaves
mini cucumbers
2 bundles rice vermicelli noodles
water for spring roll skins
DIPPING SAUCE
1 1/4 cup (295 ml) warm water
1/4 cup (60 ml) fresh lime juice
4 Tbsp (48 g) sugar
4 Tbsp (60 ml) fish sauce
1 clove garlic
1/2 small shallot
1 red chili pepper
1 medium carrot
Lynne: I absolutely love spring rolls. I thought made them in a long time though oh, and I love egg rolls but I've never made those. My favorite sauce is the peanut butter sauce with Hoisin. Date: 2021-03-23
