I am making the first meal of the new year and it's gonna be comforting. Today I am making Tex-Mex-style ground beef enchiladas topped with an egg and homemade salsa. The enchilada sauce is a savory chili gravy red sauce that is perfect for baked enchiladas. I grew up with these beefy cheesy enchiladas and still make them weekly. INGREDIENTS 1 lb lean ground meat of choice 1 tsp onion powder 1/2 tsp garlic powder 1/2 tsp ground cumin (optional) 1 tsp salt pepper to taste 15 corn tortillas 1/3 cup oil (for softening corn tortillas) 12 oz Colby Jack or cheddar cheese ENCHILADA RED SAUCE INGREDIENTS 3 to 4 Tbsp oil 1/4 cup all-purpose flour 2 to 3 Tbsp light chili powder 1 Tbsp beef or chicken bouillon 1/2 tsp onion powder 1/2 tsp ground cumin 1/2 tsp garlic powder 1/2 tsp onion powder 2 cups water

The best place to be on New Years Eve is in the comfort and safety of home. Especially in these times. Great way to start the morning without a hangover or th jail ir the hospital. Im from South Texas and this is my kinda food. Been subbed since you started and of course bought your book. I never see you make Sopapias? Yumm with a chunk of butter and shot of honey. Oh yeah. I made corned beef hash/w potatoes (not sure if hash automatically implies potatoes, over easy eggs, and oven Melba toast. I used sliced sandwich bread, buttered it, and baked it until very golden brown sort of like store bought Bimbo toast, but yummier. Oh, and of course coffee.
I make something similar to your breakfast enchiladas, but instead of rolling them I slice the tortillas up like for chilaquilles, and I like to call them Enchilaquilles.

Our New Year morning tradition is fried tamales with eggs and salsa.
That started years ago when we would spend New Years RV camping with friends.
I'd get up early and take my Lab for a walk, watch the sunrise and walk back to camp to be welcomed by a nice camp fire, some hot Champurrado and eventually fried tamales.
Great memories and so delicious.
I could easily have enchiladas for breakfast!

I have your cookbook and love when you refer us to the recipe that you are making that can be found in the book. We love the onion on enchiladas too! My favorite is cheese and onion and we serve with an egg on top of enchilada also. We make them NM style so they are flat and stacked. Love them rolled too. Thank you!

When I was little my grandpa always ate his enchiladas with a fried egg on top. Now this is the only way my family eats them, even for dinner. lol Also, to make the process faster we lay the enchilada flat on a plate and layer. No need to roll or bake. Quick and easy dinner.

Got a link to the cookbook so I can buy one? Tex-Mex is the only Mexican food I like. Grew up in Texas and there is a huge difference in what they call Mexican food here in Florida and what I call Mexican food.

Hola, from the coast of Ecuador. Originally from Texas. Sure, I miss my tex-mex food. I do a pretty good job of making it for myself, but I surely would love to go to a Mexican restaurant

Happy New Year's. For my New Year's celebration, I was like you and didn't do anything. I take that back I nursed a migraine from all of the fireworks from my neighbors.

We always have brunch on New Year's Day and I make a Chile Relleno casserole. It's so easy and yummy with lots of gooey cheese. Your enchiladas looked delicious!

Happy new year.
I cheat; I stack my enchiladas in a cazuela dish and put my egg on top and serve with arroz blanco. I could eat this for breakfast, lunch, and dinner.

We stayed home and celebrated the new year! We had BBQ for dinner and left overs the next day!

One of my first food memories as a toddler was eating cheese and onion enchilada with some Mexican style rice. Still a comfort food to this day.

We fried a turkey with our neighbors and stayed home as well we never go out when everyone else does lol annnnnd your enchiladas look amazing!
