1. soak in cold water for one hour
2. blanch in boiling hot water for five min
3. sauce: 1/3 cup soya sauce, 1/2 cup mirin, 1/4 cup sugar, 2 cups mushroom soaked water, 8 garlic cloves minced and 1 teaspoon gingle, black pepper
4. cook for 20 min over medium high heat
5. on boil, turn to low heat
6. add carrot, turnip, mushroom and water chestnut
7. cook over low heat, simmer for one hour, stir occasionally
8. after on hour add dried dates (jujubes)
9. add 2 tablespoons of syrup
10. simmer for another 10 minutes, turn to high heat and stir
11. serve with pine nuts and fried ginkgo nuts

I gotta tell you. The radish is more important than the beef. Its so delicious after - soaks up all the sauces and is more favorable than anything else. You only really need carrots and daikon. The mushrooms where a nice touch but most Koreans dont put the other stuff in unless you want to get fancy. But use as much radish as you can fit in. Its so good.

Hi Maangchi, tried some of your recipes already and they always taste amazing! So thanks a lot! I'm always curious about this dish, glad you decided to upload it. One question, is it ok to skip chestnut & ginko nuts? Even the korean spmarket here doesnt always have them. Eottokeyo?

I made it several weeks ago with just beef ribs, carrot and jujube. It turned out so delicious! My husband asked all beef prepared this way going forward. I finally have radish and chestnut for the authentic recipe today. It's in the instant pot now.
