Steamed mussels pack an incredible flavour, and along with saffron flat breads you have a delicious and healthy lunch that can be made in minutes. Fast food, but with a touch of class. Marth: Ok I came up with measurements for anyone wanting to make this themselves1 cluster of Saffron2 cups bread flour1/4 cup of hot water for steeping the Saffron(to be added to the flour)1/4 cup of cold water2 tablespoons olive oil1 tsp saltJust follow Gordons steps and it will come out exactly like this, just scale up to make more dough if you have a big party or gathering. But I worked out the measurements on my own, the dough had an absolutely perfect consistency and worked brilliantly.

There is only one big mistake, Saffron main biocomponents SAFFRANAL witch is aromatic part of saffron is rich in antioxidant and sensitive to heat, therefore puring hot water on saffron is coming from lack of education and for such a public figure like him is not good. I found this website a great place to learn and buy a very high quality saffron. www. affronice. com

Big Advantage for me here. Im Indian and literally. Saffron is about 2 over here. Its so cheap. Not only that, we make this flatbread everyday for lunch and dinner. These are called Chapati in India. Man this is so easy for me. Btw. Saffron is called Kesar over here.

this one reminds me of our holidays and we went a picked large mussels of the rocks when the tide went out and cooked them at the back of our holiday caravan in a large cooking pot, enough for 12 people in it, always tasty and fresh. smelt gorgeous too.

When he cuts through the raw dough that easily with his knife, it shows how much passion he puts into sharpening his knives. One easy culinary tip for all of you amateur homecooks out there. Put passion into sharpening knives.

I have made this now 3 times and its wonderful. Have not done the flatbread yet but just purchased saffron. The key is to really cook the pancetta/bacon well or it is too soft.

Its really funny that when the mussels are taken out of their bowl and put onto the plate, there is so many mussels that some of them fall on the table.

Im a newbie and have no idea what Saffron is. Any idea on replacement spices or herbs that might work with this kind of thing? Same goes for the fatty pork.
