You can tell he has a bit of irish in him. You have a wet piece of fish, you then season it with salt and peppa to draw out the moisture. Yet you then place it back into the fridge which is cold and damp which is why you keep fish in a fridge in the first place to keep it from drying out.

Mr. Ramsay, I follow your recipes a lot, but Im a bit confused here: in one of your videos you say to add baking powderto the beer batter and in another to add baking soda. Also saw a third one where you mention eggs. Whats the difference? Which is better? Thank you.

Made this the other day with the potatoes and a watercress salad- delicious- the ginger beer was fantastic with the fish- light, and moist inside with a beautiful crisp outside and a touch of ginger- my favorite

Gordon, man -- those are not mushy peas. Thats some mashed abomination. Marrowfats, salt, bicarb and water. I am very disappointed. As you say, do it properly, man.

I would go with a coleslaw instead. Something fresh and crunchy goes great with deep fried fish. trust me im Canadian and ive had hundreds of shore lunches.
