One of my best friends growing up was Italian, and her Nonna often babysat a bunch of us after school. She taught us a bunch of recipes that I consider staples to this day. Anyway, one time, I decided I wanted to make fettuccine Alfredo for her -- but I planned on using the AMERICAN version. She watched in confuzzlement as I got cream from the fridge and flour in the pantry. Finally, when I was about to drain the pasta water away, she stepped forward, smacked my hand gently (lol, and said No. No, no, no! Then she proceeded to show me this very recipe! Like my Asian grandmother, she never measured anything she cooked, but everything turned out bloody brilliant anyway

EMMA! AMAZING! So delicious and easy to make! I think many of us in the US are accustomed to boiling a large pot of water, adding too little salt, throwing the pasta in and when done, throwing the pasta water away! When I learned the method you show in this video it was life changing! Thank you so much for sharing this, it's truly THE way to make pasta.

As an American, I'm not sure I've seen the egg fettuccine pasta. I will certainly look for it though! I also never pour the water back in like you mentioned not to do so I scored a few points there lol woohoo!

Gonna give this a try soon. Seeing this makes me wonder why the package instructions always tell you to use enormous amounts of water, like 1000ml for every 100gr of pasta.
