The Gulf Coast has a huge Vietnamese population dating back to the end of the Vietnam war. This video from the Southern Foodways Alliance documentary series explores the cuisines that came out of these combined traditions. Cajun and Vietnamese have some common themes: Theyre both spicy, both adore seafood, and French influence is strong throughout. They recently tried opening a Viet-Cajun-Crawfish restaurant here in Saigon, but it closed only 6 months later. Local Vietnamese people are very traditional with their cuisine. East/West fusion cooking has not caught on in Vietnam, like it has in America.

If you watch the Ugly Delicious episode about them. Theres a very heated debate by Chang with these people opposition to the Middle East migration. Both side have fair arguments, very interesting perspective.

The first time I had Vietnamese food, it was nasty, but I learned that was just that shop was bad to begin with. Didnt try viet food again till years later and I gotta say, it's some of the best

Apologies to those who like crawfish boiled with just a bag of spices, potatoes, and corn. but Vietnamese-style crawfish is just the best! Crawfish season can't come around soon enough.

Fun fact: the red crawfish is considered as invasive animal in vietnam, because it eats everything, leave nothing behind for the local species.
