Had this at Galatoires in 1975. Incredible stuff. It compares with the Snapper soup they served at Bookbinders in Philadelphia. Best turtle soup ever was at a restaurant in Louisiana about 2 miles off I-10 near Lake Charles. The place didn't have a sign out front and was on a dirt road. The food was incredible and the Creole waitress was miss universe quality beautiful!

But where is the maillard reaction? There's no umami or funk today. Just some plain old velvety sheen and the bold body of the gamey briny turtle. Sheesh. What a rip off!

There's just something so wrong to me about eating reptiles. I guess it's just b/c I didn't grow up eating it so don't find that meat to be normal.
