-JeraPerthro ye I am in NC and they call it all the above salt port, fat back or my grandma and em, LOL Would use Hamhocks truth be told. Grandma would say that salt pork would be too greasy for her but whatevs. do what you got to do to achieve the taste that you like. Many diff ways to skin a cat. :)

-fairy20tails Well, I doubt it's due to a difference between gas/electric temperature. It's very unlikely that the markings (low, med, high) are equivalent on any two stoves made by different manufacturers. You probably just need to turn it to med-low, for example, when you used to use medium. Good luck!

Yummers! I like this recipe. And koinkidentally, I have some dried black eyed peas soaking now, that I'll be cooking up tomorrow. Never thrown in a jalapeno, but I think I have at least one lurking somewhere in the veggie bin, so why not. -

Do I have to adjust my baking/cooking temps when using a gas stove? I cooked on electric my whole life, then 3 years ago we bought a house and it seems like I burn things more often. Like maybe the temps a little hotter or maybe Im just not a good cook lol

I make BEP with smoked pork chops or sometimes ham hocks. But my mom always used salt pork when I was little. Awesome, girl! Oh, and by the way, frozen or even canned(I know don't freak) are still good with doctoring. You go girl!

-cozzyk The ones in your pantry are dried and will need to be covered twice as deep with water and cooked about an hour and a half. There's better instructions on my website!

-ItsMeFawn Hi Fawn! Yeah, you use dried peas which take longer to cook than frozen ones, which is what I used in the video. Your recipe sounds delish, though! Thanks!
