friendly tip when trying to flambe at home: Rather than try to catch the alcohol alight in the pan, it’s much safer to put the alcohol in a ladle, then hold it at arm’s length over a gas flame until hot. Slightly tip the ladle to ignite the fumes, then carefully pour the burning alcohol over your dish and allow the flames to subside.
