Did you by any chance go to Mother's? It's on the corner of Poydras and Tchoupitoulas. Best Po-Boy is the Ferdi which is their baked ham and slow roasted Roast Beef and what is called Debris which is described thusly. The Roast Beef that falls into the Au jus gravy in the pan while it's roasting in the oven.
