The sludge (crackle you called it) you used off the bottom of the fryer is something we in Australia call dripping. We used to (and some still do) have a special pot under the sink called a dripping pot that had a sort of strainer lid and we would pour all the oil and crap from roasts and frying into the pot and it would set into a thick fatty gel. We would then use the dripping instead of oil or fat to cook with, and would use it as a base for gravies. It is the greatest thing in the world, all the flavours of past roasts and breakfast bacon all congealed into a perfect frying fat. I highly recommend starting a dripping pot, the longer they are kept the better they get.
My grandmother used to eat dripping sandwiches, which made me sort of ill watching her.

Even to Babish, big fan, but to anybody, ANYBODY who says they can cook KFC.
Sorry stop, you cant.
This is coming from someone who WORKED at and fried KFC chicken as a kid.
Being my first job, I was tempted to steal the 2 bags of seasoning to get the recipe and betray the Colonel, I chose not to betray him.
But buddy youre far from cooking KFC
If they cooked how youre describing, it wouldnt be fast food and way too expensive hahahahaha.
KFC isnt this complicated to cook hahaha.
Also, nobody has a commercial pressure cooker in their home including you. So this is just really good fried chicken, not KFC.

I did not realize how many herbs and spices are in the KFC chicken's breading. This video really had me rethink the way things are cooked when you then showed techniques like grating frozen butter for biscuits or ricing mashed potatoes before adding butter to them.

My secret to fried chicken is adding pickle juice and hot sauce to the buttermilk as well as the spices plus adding bit of lard to the fry oil and frying a few pieces of bacon in the oil before the chicken. It adds flavor to rhe oil.

Hate to break the mood but MSG is actually the cheat code of taste. And considered unhealthy in many countries. It is also forbidden to use in packed food in many.

Glen and Friends Cooking has been recreating KFC as well you should check it out. I stopped eating there years ago but this made me curious
