ZOMBIE FISH Found inside a GIANT TUNA! Plus a GIANT HAMMERHEAD SHARK James: Back in Hawaii, we will bleed the Ahi immediately upon landing it. This helps to prevent the warm blood from fouling the flesh and hastens the cooling process. You bleed it by either cutting across the gills or two cuts behind the pectoral fins into the blood line. It's important to perform this while the heart is still pumping. At the dock, we will remove the head and gut the fish. We then submerse it in a saltwater and ice brine for 24 Hours prior to quartering. All of this will increase the flavor while maintaining a balance between firmness and tenderness. It also creates a certain clearness / transparency to the meat that most high end sushi chefs prefer. It's the best Sashimi you will ever have.

Hey Sir - Michael Jordan Sr. here from Southern Maryland. I caught some NICE BigEyes out of Oregon Inlet and gave my Dad a bunch. He asked how to best cook it. I told him seared with butter in cast iron or the grill. He said, -Not eating no dang raw fish-. He had breakfast for me at work on Monday. Deep Fried ( Cooked all the way through) Bigeye Tuna and Scrambled eggs. Didn't think that I would ever say this but some of the BEST Tuna I ever had. May GOD continue to BLESS YOU my Brother.

Gabe, since you are showing us the tuna guts, if you ever fillet a red snapper and see there's a sack of caviar, don't throw it away, steam it 12 minutes when the water is boiling, after that just scoop it into your mouth while it's still warm, i guarantee you it's going to taste naturally sweet and no other seasoning needed.
