I'm sure this is good but this shit is ridiculously eXPEnsiVE. I swear my mom would kick my ass if I just drowned these things with a bunch of other things. It's almost like drowning wagyu steak in cheap A1 sauce. Not sure about other families but my family usually just steam them and eat it without seasoning cause the natural flavor of it is good even without seasoning.

This type of crayfish is eaten in Korea and Japan. We first wash this in water. And boil for 10 minutes. Remove the head with scissors and cut off both legs and sides of the body. This will easily separate the hard shells from the top and bottom.

I didn't realize that those Scaly tailed mantis shrimp (Lysiosquilla scabricauda) were that plentiful, and that they hunted in the water column actively. Plus, I didn't realize they got quite that large. That was really cool.

After splitting any such crustacean, pull the meat out of the shell while it is raw. Leave the very tail end attached. Lay the meat back in the shell and then cook. The meat will then be a breeze to remove.
