Gai pad prik gaeng (, or chicken fried with red curry paste, is one of my favorite Thai street food recipes. Here's the full recipe: There are many amazing Thai street food dishes to eat and to cook, but one of my personal go-to dishes is something known as gai pad prik gaeng (, a stir fry of chicken and red curry paste. It's one of my personal favorites, and I like to think of it as a dry curry, or a curry where all the flavor is caked onto the meat. You could make this gai pad prik gaeng recipe with any kind of meat of your choice, my favorites are with chicken, shrimp, or squid, but even beef or pork would work just fine too. The main component of this Thai chicken fried with red curry paste recipe ( gai pad prik gaeng, is the Thai red curry paste. That's really what gives the entire dish its flavor, and that's really one of the only things you need besides the chicken, in order to make this dish. For the full recipe for Thai red curry paste, check out this video: You could also buy Thai red curry paste in a can or in a tub, but let me tell you that it's so much better when you make it fresh - freshly pounding all the ingredients yourself makes all the difference in flavor when you make this Thai recipe - so if you can, make your red curry paste fresh. Ok, so here are the ingredients you'll need to make this gai pad prik gaeng recipe ( ): 300 grams, or about 1. 5 chicken breasts 3 strands of Chinese long beans (or about cup of chopped string beans) 3 - 5 kaffir lime leaves 3 tablespoons Thai red curry paste (recipe here: 1 teaspoon fish sauce teaspoon sugar 1 tablespoon oil for frying Again, this Thai recipe is really simple to make, as long as you have some Thai red curry paste available. Then all you have to do is slice up your meat, and stir fry everything up, and you'll have an extremely tasty Thai stir fried curry dish. Along with the chicken and the red curry paste, one of the most important ingredients in my opinion is kaffir lime leaves. It's not an absolute must that you need to include them, but it really adds an extra dimension of wonderful flavor if you tear in some kaffir limes leaves into your gai pad prik gaeng. The kaffir limes leaves give the entire dish a nice lime refreshing boost of flavor. I like to eat my gai pad prik gaeng ) with a fresh plate of steamed rice, and often a fried egg on the side. Mark I love your recipes and I understand your wife made the over easy egg In this video. I don't want to be critical but if you ever have brown on the eggs that means that its cooked way too high of a temp or too long. Egg cookery is difficult but it does make a difference in the long run if you eat eggs at many different places you can see the difference. Eggs are very temperamental and most people don't usually understand that. I mean look at how hard hollandaise is to make which is egg and clarified butter emulsified and if you slow down while whisking it will become runny instead of thick. But aside from that I REALLY enjoy all of your recipes and I personally prefer more fishsauce in everything I think you get it spot on. Right now I'm into Filipino cuisine. I know thai food is your main food scene but if you could make some great filipino recipes I'd appreciate it.

I hardly comment on your vids. I don't know why, perhaps because of, despite your funny faces while eating that are completely predictable most times, in this video, you put it out all on the table. In the back ground, you had all the sauces and in the foreground, you had the exact same wares as a street vendor in your home that you and I love so much. I thank you so much I hope that one day, I can take out of Thailand what you have. You and your wife are amazing people-Chris

6: 40am and staying with the fire this cold, Kentucky night and what a more joyful way to spend this time watching you cook. The red curry paste is definitely going to be tried, and the chicken as well. I'm afraid that finding the leaves might be impossible. Regardless, it sill still be delicious. What a joy you are. Hi Mark, Love all of your videos. We are returning to thailand soon but we are only in bangkok for 1 night, we are staying at the le bua state tower, can you recommend a good street restaurant nearby? We don't like fancy restaurants, just good street food. Thank you

Awesome and yummy video as always BTW maybe it's personal preference, I prefer precooking the long beans in boiling water to make them softer before stir-frying with the chicken. I think blanching also helps deactivate some anti-nutritional factors in the beans.

Mark, you produce some of the best videos on authentic Thai cooking I've seen I'll be coming to Thailand later this year on a culinary tour and would enjoy meeting up and throw back a few brewskis. Anyhow, keep on producing those #awesomesauce videos. :)
