How to Make Chile Colorado. Meet My Abuelita Chile con carne recipe INGREDIENTS (GUAJILLO SAUCE) 8 chile guajillos 1 medium onion 5 to 6 cloves of garlic 1 1/2 tsp Mexican oregano 1 cup chicken broth (STEW) 3 to 3 1/2 lbs pork shoulder meat salt and pepper to taste 2 tsp chile powder 1 tsp ground cumin 2 1/2 tbls all purpose flour 2 cups chicken broth 2 dried bay leaves

I really enjoyed watching your video and loved seeing your grandparents. They are adorable. So I made the Chile Colorado. It was one of the dishes my mom made for us as we were growing up. She made lots of food and I watched her cook. She owned her own business and it was hard work. My mom use to say watch me and you will learn. Truth is that is how I learned. I was so intimidated with cooking as a child and young adult and thought I could never cook like my mom. Her food was always the best! This food reminds me of our meals together. I will continue to watch your videos and tweak the recipes to add my special touch. Thanks so much for helping me get past my fear. The dish came out just like my mom use to make it. We are so happy to bring more of our Mexican culture to our table. My teenage kids love it.

I was raised in a french family & was the apple of my paternal grandmothers eye. (Being the only child of her baby son; the youngest of 8) I have many treasured memories of helping her in her kitchen. She gave me my love of cooking & taught me well. As i watched you & grandmother together at the closing, so many memories flooded my heart. I miss her so much. The sound of her laughing and the loving security of her hugs. As I lamented your grandmother pinched your cheek, and this here 52yr old man burst into tears. My grandmother used to do the same exact thing to me. Bless you & your family. This is exactly my recipe! Lol which is my grams recipe too. I m 75 years old and can still recall my nana cooking her tamales which were superb! Lol same sauce we used for tamales, chili Colorado and our enchilada sauce! I also will add a few different dried chili s for that deep red color and smoky taste. Pasilla and perhaps. New Mexico or California chili pods. They add a deep red color and richer sauce, but it s the same ingredients. Just different chilie pods on occasion.

We visited a Mexican family last night and were served a delicious meal of Chile Colorado with three types of chiles. So wonderful. Ours had beef. I like this video showing how to prepare the chiles. My question: to make this dish more mild, do we just remove seeds or do we use fewer chiles? Great video. Warm regards to your Abuelita who is obviously so proud of you! Wow. Chicano here. From East L. A. Now living in Florida. The only Mexican restaurant within local driving distance makes it insanely wayyyy too hot. My wife is 2nd generation English but she is a fantastic cook and learns to cook by taste quite quickly. She's gotten into preparing several Mexican dishes and keeps me in heaven. She said she will try this in a few months. Can't wait. Thank you.

Im sorry but meat braised in sauce is not chili. I dont care who you are or where your from. My sister made this and is definitely not chili. It is more along the line of bar b q beef. Chili has more substance to it. Beans. Like i said this is just braised beef. My chili will satisfy while this will just leave you wanting for substance.

I have a question about the chili puree after you take it out of the blender. Some videos say to run the chili through a mesh sifter of some kind to take out any pulp or chili skin that didn't puree. I notice you didn't mention that. I tried it your way and there was bits of chili skin when I was eating it. Did I do something wrong?

You bring back memories of my nana and my other Abuela. I do miss coming to there house and it always smelled delicious. I am so grateful I was taught a lot of what you make. Thank you for this video. At this time of the year, chili colorado is wonderful to have with some tortillas! Now I got to make this today lol.
