I have done hundreds of roast chickens in my life as a cook, always a crowd pleaser, this humble gentleman just made me feel like a novice who doesn’t even know how to cut an onion lol I love his attention to detail and his explanations on why he does everything. Hats off to you chef I am definitely going to try to recreate this and will probably fail miserably what a talented guy!

The technique of making a gastrique and adding to a jus is actually almost identical to the process of making Duck a l'Orange. So it's kind of like he's making Chicken a l'Orange with a Caribbean flair (due to the habaneros and lime juice)
