I know it's kind of a cheat, but I've got a special soft spot for the cold version of spinach dip you find on the back of Knorr's Vegetable Soup mix packets, heavy on the sliced water chestnuts and served with pretzel crisps.

Real question though, I saw that you added corn starch to your beer cheese dip? How is this different from using shreaded cheese covered in potato starch? Won't they both thicken up?

A really nice touch for spin dip is a table spoon or to of green chilie powder. That's what we do at the restaurant I work at and it is wonderful.
