If gravity turned off, the whole entire earth would come apart, you wouldn't have to worry about the atmosphere disappearing, you would disappear just as fast as it would, gravity is the only thing holding the earth together in a loose clump, look how the lunar and solar tidal forces warp it, the deeper you go, the more intense and extreme the pressure is, that pressure would rebound like a bomb going off, the spin of the earth would add to it a little, and the extremely high pressures from all the thousands of miles of mass stacked on top of each other, would rapidly release instantly, you wouldn't fly off the earth, the whole earth would erupt with you in a massive Pyroclastic Flow upwards, because of all the energy released and friction of everything under you crumbling and interacting, and would eject you as vapor in the Pyroclastic Flow, off into space, with the molten magma close behind in the rapid expansion, melting everything into a giant fireball.
5 seconds would be enough to turn the world into an inferno, the disruption of the entire earth expanding for 5 seconds, then being pulled back in, would end all life on earth.

I don't think the trees would instantly go flying off. Even if we include the earth's rotation, it takes a lot of force to move a tree's trunk let alone explosively launch it into space without uprooting it.

Really, how fast could the atmosphere be blown off? I know the gas orbits earth because gravity, but there must be a force that is causing it to drift off. And how fast can planets go if they deorbit?

If gravity stopped we would suffocate, as there will be no air pressure. Air pressure is needed to fill the lungs when the diaphragm goes down.
